Fat Burning Soup Diet Recipe #2

This soup falls right in line with the Fat Burning Soup Diet, and is absolutely perfect for dinner.

Why?

Because, to name a few reasons, it reminds me of hot wings, has a bit of “kick” to it, and it is very low in carbs and calories.

Remember, to heat these up on the stove if possible.  If it’s not possible (such as at work), it’s okay to use a microwave.

So, here it is… another delicious soup for use in the Fat Burning Soup Diet:

Buffalo Chicken Soup

This is from 3 day military diet shopping list. Let’s check out list below 

2 stalks of celery
3 green onions
1 tablespoon of real butter
16 oz of fresh cauliflower (use frozen only if you have to)
32 oz container of chicken stock
1/2 cups of heavy whipping cream
1/2 cup of Franks Red Hot Sauce
5 oz of chedder cheese
20 oz cubed chicken breast (two 10 ounce cans)
Salt and pepper to taste

Chop the celery and onion.  Next, in a medium size pot, saute the celery and green onion in the butter until it starts getting soft.  Remove from pot and set to the side in a bowl.  Add both the cauliflower and broth to the pot.  Cook on high heat 20 – 25 minutes until very soft.  Remove from heat and let cool for about 10 to 15 minutes.
Put the cauliflower and broth mixture in a blender or food processor until well-blended.  Put the blended cauliflower/broth mixture back into the pan.  Add the heavy cream, hot sauce, reserves celery/onion mixture, and the chedder cheese. Return to low heat to melt the cheese.
Next, add the cubed chicken breast and heat.

Season with salt and pepper to taste (it is plenty salty for me as is, so I only added pepper)

I used about 3 cups of broth when I made this, but heating it up this morning to put in my thermos and bring to work, it was extremely thick, so I added the additional broth. If you intend to make this and immediately serve, I would hold off on some of the broth and use it to thin the soup as needed.
